Serves: 4
Ingredients
2 Tbsp olive oil,
½ cup minced onion,
3 cloves garlic, chopped,
¾ cup pitted olives, roughly
chopped,
2 Tbsp capers,
½ teaspoon red pepper
flakes,
1 (28-ounce) can crushed
tomatoes,
⅓ cup chopped parsley,
1 teaspoon dried oregano,
¼ cup chopped fresh parsley,
salt and black pepper to taste
Instructions
1. Heat the oil in a large skillet over a medium flame. Add the
onions and saute until soft.
2. Add garlic, olives, capers, red pepper flakes and oregano to
the skillet, and saute for 2 minutes more.
3. Add the tomatoes and parsley and simmer until sauce is
thicken slightly. Season with salt and pepper.
4. Serve with pasta (like spaghetti) and grated Parmesan
cheese.
