Each worthy cake begins with smooth ice. The cake needs to be completely cooled before it is iced and decorated. To keep the crumbs from your ends in the ice and destroy the appearance of your cake, start with a thin base layer of frosting that is not quite as stiff as the regular layer will be. Once this coat on, set the cake in the fridge for 20 minutes. This ice will set and any crumbs will be caught in this first layer. Now you can spread a regular layer of ice without worrying about crumbs.

Use the ice spoon to apply the smooth second coat of ice. Once the ice is on the cake, start smoothing on the sides by running a spoon around the perimeter of the cake. One trick to soften frosting is to dip the mineral ice spoon in cold water, and this will help soften the frosting. To soften the top, dip the spoon in cold water and hold it horizontally over the top of the cake. Start at the furthest point from you, holding a spoon in both hands, skim the top of the ice by bringing a spoon directly towards you.
